Options explained

Size
Set as a percentage of the image height, so text keeps the same proportions on small and large pictures.
Outline and shadow
A dark outline or a soft shadow keeps text readable on busy or bright backgrounds.
Meme style
Two captions at the top and bottom in heavy capital letters with a thick black outline.

Text size at different image sizes

Because size is a percentage of the image height, the same setting gives the same look on every picture. The actual font size in pixels is the height times the percentage:

Image height 5% 8% 12%
600 px 30 px 48 px 72 px
1080 px 54 px 86 px 130 px
3000 px 150 px 240 px 360 px

A caption of about 5% of the height reads comfortably at the bottom of a photo; titles and meme text are usually 8% or more.

Does it work with Chinese and emoji?

Yes. Chinese text wraps between characters, and emoji use your system's emoji font.

Is the image quality reduced?
